Vegan Pumpkin Spice Latte


I love pumpkin flavored or scented anything! Especially this time of year. And i especially love pumpkin spice lattes! Of course, the Starbucks one is great (and I have had it wayyyy too often this month) but it is definitely not the healthiest. Jaye and I have been trying to be more healthy conscious lately but I could not give up my PSL! So I decided to create a healthier homemade version of our festive favorite. Also, it's dairy free! Trust me, you can not even tell that it is dairy free. It's so frothy and delicious.

*NOTE* This makes 2 regular mug size servings


2 cups soy milk or almond milk

2 tablespoons pumpkin puree

2 tablespoons maple syrup

1 tablespoon vanilla extract 

1 teaspoon ground cinnamon 

1 cup strong brewed coffee 

*For topping: dairy free whipped cream and cinnamon 


Start by brewing your coffee. Once brewed, pour coffee equally in to each mug. 

In a small saucepan, start to heat the milk, pumpkin, maple syrup and vanilla extract and mix until well combined. Make sure to stir frequently so it doesn't burn. 

Once the milk is heated through, take the saucepan off the heat and stir in ground cinnamon. 

Once combined pour over the top of the coffee in each mug and serve with whipped cream and an extra sprinkle of cinnamon.
