Easy Gluten Free Chocolate Chip Peanut Butter Cookies
I love to bake! Especially cookies! When I was still in high school and living at home, I would borrow my moms Kitchen Aid and test out cookies recipes all of the time. But these recipes would be full of flour/gluten.
When I met my boyfriend, one of the first things I wanted to do was bake for him, but when he told me he had a gluten intolerance, I didn't even know where to start! But I figured it out and started testing recipes. The first few were a bust; too crumbly, tasted like sand, ect.
But a few months ago, I found the perfect recipe that uses no flour at all. And it is perfect! I knew it was perfect when he finished the entire plate of cookies in an hour (my mom was right when she said "food is the way to a mans heart!")
P.S. It is also one of the easiest recipes ever! And you can whip it up in 15 minutes!
1 cup creamy peanut butter
1/2 cup light brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup chocolate chips (optional)
Preheat your oven to 350 F*/175 C*
Prepare two baking trays with parchment/greaseproof paper
Mix all the ingredients together in a large bowl with a wooden spoon
Once combined, scoop out about 20 1 Tablespoon portions and roll each into a small ball. Place each ball about an inch apart on the cookie trays. Lastly, with a fork, press down on the cookies two ways to create a hashtag pattern.
Bake for 8 to 10 minutes depending on how hot your oven runs
Let the cookies cool for at least 5 minutes before taking them off the tray
