Gluten Free M&M Cookies

M&M cookies are just so fun to look at! They are colorful and very tasty! Little back story on M&M cookies for me! During Comic-Con it is really hard to eat healthy! Like seriously hard! So all of the healthy eating just goes out the window! A few years ago, while trying to roam around for food at 6am, I found a pack of M&M cookies at a tiny cafe near the Con and basically lived on those for the day! So you would think I had a bad memories around these cookies! But nope! They remind me of Comic Con and they are delicious! However, those cookies weren't gluten free! But these ones are! 

NOTE* This is a big batch recipe. I made about 40 cookies!


Ingredients

3 cups all-purpose gluten free flour 

1 teaspoon baking soda

1 teaspoon xanthan gum 

1/2 teaspoon cream of tartar

1/2 teaspoon salt

1 cup (225 grams) unsalted butter, softened

1 cup brown sugar

3/4 cup granulated sugar

2 large eggs, room temperature

1 tablespoon vanilla extract

1 cup M&M's and 1 cup for topping

Directions

In a medium mixing bowl, stir together the flour, baking soda, cream of tartar, xanthan gum and salt. Set the bowl aside.

In a large mixing bowl, beat the butter, brown sugar and granulated sugar until light and fluffy. Beat in the eggs and vanilla until well combined.

Gradually add the flour mixture and beat just until combined. Mix in the M&Ms.

Wrap the dough in plastic wrap and refrigerate for at least two hours. Then roll into balls.

Preheat the oven to 375* F/ 190* C

Line a baking sheet with a piece of parchment paper. Place the dough balls a couple of inches apart on the prepared baking sheet. Bake the cookies for about 10-12 minutes or until lightly and evenly browned.

Remove from the oven and immediately press a few more M&Ms on top of each cookie, if desired. Let the cookies cool completely on the baking sheet.

Store in an airtight container for up to 4 days.
