The Salad Series - Summer Strawberry & Avocado
Healthy food!!!! Now, I know what you are thinking... You think I never eat healthy because I'm constantly baking. But I really do try to eat healthy most of the time, especially because I bake so often! I love my fruit and veggies, so this salad mixes both. Also, like I've said before, this summer hasn't been summery at all, so this salad really does make it a bit better! It fresh and very tasty. It's also really pretty and easy to make as well! Definitely something I would take to a summer BBQ.
P.S. If you are reading this and you still buy pre-made salad dressings at the store, STOP! Making a homemade dressing is so easy and way healthier. And in my opinion, a whole lot tastier!
P.S.S. This is a full meal serving for 1 person or a side portion for 2 people! So if you are making this for a BBQ, just triple the recipe or more!
1/2 Tablespoon Olive Oil
1/2 Tablespoon Apple Cider Vinegar
1/2 Tablespoon Lemon Juice
1 teaspoon Honey
1 teaspoon Poppy Seeds
1/2 teaspoon Dijon Mustard
Salt and pepper (to taste)
3 large handfuls Spinach
2 Tablespoons Feta Cheese
7 sliced Almonds
In a small bowl add dressing ingredients and blend together by mixing with a fork or shaking the dressing in a mason jar with a lid. Once combined, set aside.
For the salad, start with a large mixing bowl. Add 3 handfuls of spinach, quartered strawberries, diced avocado, crumbled feta and the chopped almonds. Toss together. Once mixed, add the salad dressing and toss once more until it completely covers the rest of the ingredients.
Tada!!! You are done and eating healthy!
