Oven Roasted Crispy Chickpeas

I am a girl who loves to snack. Although I try to eat healthy most of the time, I can't seem turn away from a plate of french fries or some chips and salsa.

So a while back, I was on the hunt for some healthy snack recipes on Pinterest and I found my new favorite snack recipe: crispy roasted chickpeas. Now if you've never had them, you are probably thinking "How on earth is that going to be a good snack? I'd rather have a bag of chips!" And that is exactly what I thought until I made them!

This super simple recipe makes the chickpeas super flavorful and savory, as well as making them super crunchy. And they are healthy! Full of protein and they keep you full.

Have them by themselves as a quick snack or add them on top of salads or rice bowls for some extra protein.


1 can chickpeas

1 tablespoon olive oil

1/4 teaspoon sea salt

1/4 teaspoon fresh-ground pepper

Any other seasonings you would like to add


Preheat the oven to 450 F/ 230 C and place a rimmed baking sheet in the oven while it preheats. Pre-heating the baking sheet ensures the chickpeas crisp as soon as they hit the hot pan. 


Drain and rinse the can of chickpeas, then pat very dry with paper towels. Any residual moisture will cause the chickpeas to steam instead of crisp.


When they’re dry, toss the chickpeas with 1 tablespoon olive oil and 1/4 teaspoon of sea salt and 1/4 teaspoon freshly-ground black pepper. Carefully remove the baking sheet from the oven, place the chickpeas on in an even layer, and return to the oven. Roast, shaking the pan halfway through, until crispy, 20 to 25 minutes. 


After they are crispy and out of the oven, add any other spices you may want. I love adding garlic powder or chili powder to give it extra flavor. They also taste great just with salt and pepper. 

Transfer to a bowl while still warm and eat away as a snack or add to a salad.
